A group of researchers of the French-Russian project No. 17-21-08001 The problem of valorization and popularization of the nutrition culture of the peoples of the North in modern conditions (by the example of Yakutia) will present preliminary results of the study. Traditional food of northern peoples is considered as a condition for human adaptation in the Arctic, Changing the living conditions, diet. A change in the dietary intake leads to various mutational changes not only in the organism of the northern person, but also changes the psychological and socio-cultural state of the individual.Valorization and popularization of northern cuisine is one way to improve the quality of life in the north.
